Bursting Bobas also known as Popping Pearls, Pobbles, Juice Balls etc is a sphere of liquid fruit juice held together by a thin gel membrane of seaweed extract. Bursting Bobas are made through a process known as spherification, which relies on the reaction of sodium alginate and either calcium chloride or calcium lactate.
Bursting Bobas are typically used as a complementary topping to Bubble Tea and Frozen Yogurt. YUM!
