Tapioca is a starch extracted from the cassava root which is used as a thickening agent in many foods and can be made into flour (it has a similar texture to cornstarch) and is often times used in gluten-free breads. Tapioca can also be made into little pearls, such as our pearls above. Personally, we like it best in pearls and in a tall glass of milky bubble tea, yum!
Each 290g of Black Tapioca Pearls will make 2 full cups of cooked boba pearls, which is enough for 8 Bubble Teas.
Cooking Instructions:
1. Add water to pot and bring to a boil (Use 8 parts water to 1 part tapioca.) 2. Once the water is boiling, add your tapioca and stir immediately with a wooden spoon until the tapioca has come to float. 3. Reduce the heat to a simmer and leave the tapioca to boil for 35 minutes, stirring occasionally (+- every 10 minutes). 4. After 35 minutes remove the pot from the heat and cover with a lid. Let it sit for a further 15 minutes. 5. Drain the cooked boba into a colander and rinse thoroughly with cold running water. 6. Place cooked boba in a storage container and add enough sugar syrup to submerge all the tapioca.
*To make a sugar syrup add 1 part sugar to 1 part water in a pot and bring to a simmer. Constantly stir the pot until all sugar is dissolved then remove from heat instantly.
TAPIOCA STORAGE INSTRUCTIONS:
Unopened Tapioca Pearls:
- Store in a Cool, Dry Place: Keep the uncooked tapioca pearls in their original. Store them in a cool, dry place away from direct sunlight and moisture. A pantry or cupboard is ideal.
- Avoid Refrigeration: Do not store uncooked tapioca pearls in the fridge, as the moisture can cause them to clump or spoil.
- Shelf Life: Check the packaging for the best-before date.
Opened Tapioca Pearls:
- Transfer to an Airtight Container: After opening the package, transfer the remaining tapioca pearls to an airtight container or resealable plastic bag. This will help protect them from moisture and air, which can cause them to spoil or become stale.
- Store in a Cool, Dry Place: Keep the container or bag in a cool, dry place, such as a pantry or cupboard. Ensure it is away from direct sunlight, heat, and humidity.
- Use Within 2 weeks: While unopened tapioca pearls can last up to 9 months, opened ones should ideally be used within 2 weeks for the best quality. Check the pearls regularly for any signs of spoilage, such as an off smell, mould or discoloration.
Cooked Tapioca Pearls:
- Use Immediately: For the best texture and flavour, cooked tapioca pearls should be used within 4-6 hours after cooking.
- Storage for Short-term Use: If you need to store cooked tapioca pearls for a short period (up to 24 hours), place them in a container with a small amount of sugar syrup or water to keep them moist. Cover the container with a lid or plastic wrap and store at room temperature.
- Reheating: If stored, the pearls may become hard. To soften them, reheat in boiling water for a few minutes until they regain their chewy texture.
- Avoid Refrigeration: Do not refrigerate cooked tapioca pearls as they will harden and lose their chewy consistency.
